Receta Piperade (Classic French Egg Dish)

- Dice onions, capsicum and tomatoes.
- Heat oil in a fry pan and saute/fry garlic, onion and capsicum till soft. Add in tomatoes, sugar, spices and herbs and cook a furthur 3 min, season.
- Beat Large eggs together and add in to onion/tomato mix. Mix well as if you are cooking scrambled Large eggs. Cook over low heat for 2-3 min, stirring, till mix just begins to set.
