Ingredientes

  • 2 Tbsp. Oil
  • 1 lrg Onion, minced
  • 2 lrg Green peppers, cored, seeded and cut into 1/4- to 1/2-inch dice (up to 3)
  • 2 x Cloves garlic, minced
  • 1 1/2 lb Ripe tomatoes, peeled, seeded and minced
  • 1/4 tsp Crushed warm red pepper
  •     Salt
  •     Freshly grnd pepper

Direcciones

  1. Heat oil in deep skillet over low heat. Add in onion and cook, stirring frequently, till tender but not brown, about 5 min. Add in green peppers and garlic and cook, stirring frequently, till peppers become tender, about 7 min. Add in tomatoes, crushed warm pepper and salt and pepper to taste. Cook, uncovered, over medium heat, stirring often, till stew is thick, about 30 min. Adjust seasonings to taste.
  2. Makes 2 to 3 servings.
