- Heat oil in deep skillet over low heat. Add in onion and cook, stirring frequently, till tender but not brown, about 5 min. Add in green peppers and garlic and cook, stirring frequently, till peppers become tender, about 7 min. Add in tomatoes, crushed warm pepper and salt and pepper to taste. Cook, uncovered, over medium heat, stirring often, till stew is thick, about 30 min. Adjust seasonings to taste.
- Makes 2 to 3 servings.
