Piri Piri Chicken Risotto with baby spinach and Tomato's

nice spicy and flavoured risotto

Ingredientes

  • 500 gm of diced chicken
  • olive oil
  • 1 punnet of cherry tomatos
  • baby spinach leaves
  • juice from 1 or 2 lemons (about 50 ml)
  • piri piri spices to taste
  • 2 cups of rice
  • 2 - 3 cups of water
  • 2 cups od grated cheese

Direcciones

  1. Cook chicken with olive oil and piri piri spices in the same large saucepan you intend on preparing the risotto in
  2. Once the chicken is cooked add lemon juice, tomatos, water and rice and cook for 12-15 minutes whilst stirring until water is pretty much evaporated and rice is cooked.
  3. At the 10 minute mark add the baby spinach leaves and grated cheese and continue stirring for 3 - 5 minutes until cooked
