Receta Pistachio Fudge Pudding Parfait
Mother Earth gave us a very special blessing today. The weather was FABULOUS and we took advantage of it. We were outside all day at an art show where my daughter was showing her beautiful painted furniture. I'm really wiped, and wanted a quick energizing snack. I cheated and used some convenient raw goodies I had around the house to help.
You can obviously make any changes you like. This is what I had around, and this is what I used.
Pistachio Fudge Pudding Parfait
- 1/2 cup cashews
- 2 Tbsp Living Tree Alive Pistachio Butter
- 1 1/2 cups filtered water
- 2 drops Medicine Flower Vanilla Extract (or 1/2 tsp of your favorite extract)
- 2 Tbsp honey (agave, or maple syrup)
- 4 Tbsp chia seeds (I used white so as not to darken the pudding)
- 1/2 tsp lucuma powder
- 1/4 tsp super green power (optional)
- 1 medium kale leaf or more per taste (not enough to alter flavor)
- 2 Tbsp Love Street Chocolate Spread
Blend all ingredients, except Chocolate Spread, until creamy.
Taste for sweetness and adjust.
Fill 3 parfait glasses 1/3 of the way with pudding. Spoon a small amount of Chocolate Spread over pudding. Pour rest of pudding into glass. Using a toothpick, move the Chocolate Spread, making a pretty design. You can do more than one layer, just use less pudding in each layer. In this photo, I did two very thin layers of the spread.
Sprinkle with chopped pistachio nuts. Refrigerate for several hours and serve.
