Pizza Sauce From Scratch
During our pizza experiment last weekend, one of the things we really wanted to do was to be completely self-sufficient at last, i.e. make sauce from scratch. All the previous times, we have just bought pizza sauce from the store, but we wanted to make our own this time. So, because we are both scientists at heart, we decided to turn it into an experiment.
We divided a small can of tomato paste into three bowls. We did some research, and looked across many different recipes for homemade sauce.
In the first one, we mixed up a batch of sauce that tasted like crap. Lesson learned: don't put sugar in pizza sauce. Just...don't. No matter what the recipes out there say. We both dipped our index finger in there, had a taste, and spoke a profanity. Never again!
The second one tasted a whole lot better. With a generous helping of herbs, especially oregano, we were able to get a nice zesty sauce that both of us were happy with. It's all about the seasonings, folks. Seasons of love.
The third one we used to reconfirm our hypothesis. It turned out just as good as the second batch. Excellent.
Here are the fruits of our labor! This is enough sauce to cover one pizza, and possibly a little extra for dipping the crusts into. (ooh, look at that extraction. strand that preposition, baby)
Ingredients:
- -1 small can of tomato paste
- -3 tbsp olive oil
- -1/3 cup water
- -2-3 tsp salt
- -1 tsp pepper
- -1 tbsp oregano
- -1 tbsp italian seasoning
- -1 clove garlic, minced OR 1 tbsp garlic powder
- -1 tsp onion powder
- -1 tsp paprika
- -2 tsp red pepper flakes
I do believe we got a nice zzzzzing out of that sauce. And the pizza turned out fantastic :)
