Ingredientes

  • 3 c. water
  • 1 Tbsp. salt
  •     Juice of 1/2 lemon
  • 1 lb fresh asparagus trimmed
  • 1 tsp extra virgin olive oil
  • 4 x halibut filets - (6 to 7 ounce ea)

Direcciones

  1. For Asparagus: Over high heat, bring bring water and a healthy pinch of salt to a boil. Add in asparagus and boil for 2 min (water should just cover asparagus). Remove asparagus from water and set aside.
  2. For Halibut: In a medium saucepan over high heat, bring water, salt and lemon juice to a boil. Next, place halibut filets in boiling water and turn heat down to medium. Poach for 7 to 8 min. Remove from water, drain, place on serving plates and top with cooked asparagus. Drizzle lightly with extra virgin olive oil and serve.
  3. This recipe yields 4 servings.
