Ingredientes

  • 2 Large eggs
  • 1 egg yolk
  • 1 tbsp. Dijon mustard
  • 2 teaspoon white wine vinegar
  • 3/4 to 1 c. peanut oil
  • 1/2 c. watercress leaves, blanched, liquid removed and minced
  • 2-4 tbsp. finely chopped fresh parsley (preferably Italian)
  • 2-3 tbsp. cooked, liquid removed and squeezed and minced spinach
  • 2-3 tbsp. finely chopped fresh dill
  • 2-3 tbsp. finely chopped fresh chives
  • Salt and freshly grnd white pepper
  • 12 leeks
  • 12 slices ham (preferably smoked)
  • Cherry tomatoes and parsley sprigs for garnish

Direcciones

  1. Serve with thinly sliced black bread and a bowl of unsalted butter. Yield: 6 servings.
