Receta Poached Mixed Fruit
by Veronica Gantley

Time to announce the winner of our Taste of Home Cookbook.

#29 is Nicole Bartel Fisher. I am in the process of sending her the cookbook.

Thanks to all of my wonderful facebook friends!

This time of year is when we usually pause and reflect on the year that is almost behind us.

I am not going to lie to you, mine has not been the best.

I suppose that there are people in the world who have it a lot worse than I do.

There are so many things that I am grateful for.

That is what keeps me trudging along.

Even though my husband is out of work,

I am grateful that I am healthy and I can work.

I am grateful to my daughter who is growing into a beautiful, generous and kind person.

I am grateful that my family is healthy.

I am grateful to my extended family and bloggers who encourage me each day.

I am grateful to my Lord.

I am grateful that even though times are tough, my family is still together.

So pause for a moment and think about what you have to be grateful for.

Poached Mixed Fruit

Directions

Bring the water, wine and sugar to a simmer in a sauce pan. Cut the vanilla bean open and scrape out the seeds with a knife. Add the seeds to the poaching liquid along with the vanilla pod, cinnamon stick and cloves.

Put the mixed fruit in the poaching liquid and allow to simmer on low for 10 minutes.

Serve warm or at room temperature.

This may be cooked several days in advance and refrigerated until ready to serve.

Peace be with you,

Veronica
