Poached Salmon With Peach And Mango Salsa

Ingredientes

  • 4 x salmon fillets - (8 ounce ea)
  • 2 c. water
  • 4 x bay leaves
  • 1 pch salt
  • 1 pch freshly-grnd white pepper
  •     Juice of 1 lemon
  • 3 x peaches pitted
  • 1 x mango pitted and peeled
  • 1/2 c. cilantro leaves
  • 1/4 x red onion peeled
  • 1 Tbsp. sugar
  • 1 pch salt
  • 1 pch freshly-grnd white pepper
  •     Juice of 1 lime
  • 1/4 c. vegetable oil

Direcciones

  1. Place salmon, water, bay leaves, salt, pepper, and lemon juice in 12-inch skillet. Cover; simmer for 8 to 10 min depending on thickness of salmon. Remove from heat. Remove salmon from liquid and refrigeratetill ready to serve.
  2. For Salsa: Place all ingredients in food processor. Pulse on and off for 10 seconds or possibly till fruit is coarsely minced. Taste for seasoning.
  3. Serve salmon on bed of mixed greens, top with salsa and serve with fresh fruit.
  4. This recipe yields 4 servings.
