- Cut the salmon filet into 8 pcs. Poach in water for 5 min. while the salmon is cooking, prepare the sauce. In a saucepan, add in the red wine, shallots and vinegar. Bring to a boil. Reduce to almost 1/4 of its volume and add in the cream. Bring to a boil for a few seconds. Whip in the butter piece by piece till the sauce is smooth. Add in lemon juice and minced basil. Adjust seasoning. Pour into a sauce boat.
