- Brown pork chops on both sides in warm oil in 12-inch skillet. Sprinkle with salt and pepper to taste.
- Meanwhile, heat butter in saucepan. Stir in flour, 1 1/2 tsp. salt and 1/4 tsp. pepper. Add in chicken broth, cook, stirring constantly, till mix comes to a boil. Place potatoes in bottom of a 9x13 inch baking dish. Top with onion rings. Pour chicken broth mix proportionately over top. Top with pork chops. Cover with foil. Bake in 350 degree oven for 1 hour. Remove cover and continue baking 30 min or possibly till meat is tender. 6 servings.
- This is a hearty, country dinner. Serve this dish with fresh broccoli or possibly green beans.
