Pollo Cubano

Marinated chicken braised in white wine and veggies. Serve with rice or other starchy vegetable. Yum!

Ingredientes

  • 8 pieces skin on, bone in chicken pieces
  • Marinade:
  • 6 cloves smashed garlic cloves
  • 3 tbs. each of orange juice and fresh lime juice
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 tbs. olive oil
  • 1 finely chopped onion
  • 1 bell pepper (any color)
  • 1 cup dry white wine
  • 1 bay leaf

Direcciones

  1. Prep the marinade and put in the chicken. Refrigerate, covered,for 12 hours or more.
  2. Heat oven to 350 F.
  3. Place chicken in a baking dish, pour on wine and scatter the vegiies around the chicken, cover
  4. Bake 40 minutes, remove lid and continur cooking until liquid id absorbed.
