Pollo In Escabeche (Pickled Chicken)

Ingredientes

  • 1 x Fryer chicken
  • 6 x Garlic cloves peeled, whole
  • 12 x Black peppercorns
  • 4 x Thyme sprigs
  • 1 Tbsp. Toasted cumin seeds
  • 1 med Spanish onion cut 1/4" slices
  • 2 Tbsp. Salt
  • 1 Tbsp. Sugar
  • 4 c. White wine
  • 1 c. Cider vinegar
  • 1 x Lemon thinly sliced
  • 1 x Orange thinly sliced

Direcciones

  1. Cut chicken into 10 pcs and remove skin. Place pcs in a 4-qt saucepan and add in remaining ingredients. Bring to a boil, lower heat, cover and simmer for 1 hour and 20 min. Remove chicken carefully and place in a shallow crock. Pour cooking liquid and solids over chicken and allow to cold. Serve chilled with chicory salad and lemon wedges.
