Receta Pomegranate daiquiri

When we were on our honeymoon in Mexico back in April, we drank a lot of cocktails (it was all-inclusive, what were we supposed to do?!). Every day, the hotel chose a different cocktail to feature, and we enjoyed trying something new each time. Some of them were amazing, some… not so good.

One of my favourite cocktails at the hotel was the daiquiri, which they made in a few different flavours. The only problem was that they were super sickly sweet, so I could barely manage one before having to give up.

This pomegranate daiquiri is just as irresistible as the versions we had in Mexico, but it’s much more quaffable. It’s slightly tart, so it’s perfect for those of us who don’t have a particularly sweet tooth.

A daiquiri usually contains rum, citrus (I used fresh lime juice), and some sort of sweetener. I also added a good glug of fruit liqueur, and to give the pomegranate daiquiri that beautiful fruity flavour, a full bottle of pomegranate juice.

This is the pomegranate juice I used – POM Wonderful 100% pomegranate juice. Is that not just the coolest shaped bottle you’ve ever seen? Like a big stack of pomegranates (if they could somehow defy physics and sit on top of each other). I loved the slight tang that the pomegranate juice gave to the cocktail.

We also had some Wonderful Pistachios alongside our cocktails – that’s the brand name, but they actually were seriously wonderful. We had sweet chilli flavour, and the whole packet was gone before we’d even finished our drinks. I would have thought that a lot of the flavour would be lost on the shell, but I was actually surprised at how tasty the nuts themselves were!

Since I’m not really one for getting through entire batches of cocktails on my own, I had some friends over to give the cocktail a taste. It got a thumbs up! The whole blenderful was polished off in no time.

I have a bit of an issue with swigging full drinks in mere minutes – whatever it may be (water, juice, wine…), I can’t seem to make myself sip things slowly. It’s one of the main reasons that I don’t drink tea or coffee – I don’t really fancy burning my mouth several times a day. So, in an effort to slow me down, I made my pomegranate daiquiri more like a cocktail slushy, with plenty of ice blitzed into it.

If you’re not into slushies, or if you can simply control yourself a bit better than I can, you could skip the ice – but beware that it will taste much stronger that way! So you might want to go easy on the rum.

~25 ice cubes 200ml white rum 75ml kirsch (or similar fruit liqueur) 710ml pomegranate juice (one bottle of POM Wonderful) Juice of 1 lime 1tbsp agave nectar (or to taste) Instructions

Add the ice to a blender, and blend until the mixture is slushy, around 10 seconds. Add the remaining ingredients, and blend again very briefly to combine. Serve immediately. 3.2.2708
