Receta Pomegranate Overnight Oats

I love overnight oats, they have to be the easiest breakfast ever. Toss some oats,milk of choice or water, chia seeds and nut butter into a jar at night. In the morning instant breakfast! Even though the ingredients are basic, the fixins are endless. I like to add in seasonal fruits or nuts and sometimes I just eat my oats plain.
Since antioxidant rich pomegranates are in season, I thought I’d add them to my oatmeal with some peanut butter for a peanut butter and jelly flavor.
Pomegranates are in season from fall to early winter and each fruit contains hundreds of edible seed called arils. They are rich in fiber, vitamins, minerals and have anti-inflammatory properties. When I’m not using them in oatmeal, I sprinkle the arils on yogurt or salads or just eat them by themself.
If you are not sure how to get those little arils out of the fruit, try this:
- Carefully cut the pomegranate into 4 sections -the juice can be messy
- Fill a bowl up with water, place a section of the fruit in the water
- With your hands break up the fruit under water- the seeds will sink to the bottom and the white flesh will float
- Repeat with each section, then drain the arils and store in refrigerator for up to 4 days

- Pomegranate Overnight Oats
- Ingredients
- 1/4 organic rolled oats
- 1/2 cup water or your favorite milk
- 1 tablespoon peanut butter
- 1 tablespoon chia seeds
- 2 tablespoons pomegranate seeds - divided
Instructions
Place oats, water or milk, peanut butter, chia seeds and 1 tablespoon pomegranate seeds into a glass jar or bowl and mix well
Place in refrigerator overnight
In the morning, mix well and top with 1 tablespoon of pomegranate seeds
