Receta Ponzu Sticky Hoisin Ribs

Ingredientes
- 3 quart water
- 1Â 1/4 c. soy sauce
- 1Â 1/2 tsp salt
- 1/2 c. whole star anise (optional)
- 4 ounce ginger, peeled and minced
- 4 x scallions, white part only, minced
- 1/2 c. sherry cooking wine
- 5 lb St. Louis pork ribs, cut between the bones
- 1 c. hoisin
- 3/4 c. soy sauce
- 3/4 c. sugar
- 1/2 c. lemon juice
- 1/2 c. rice or possibly sherry vinegar
- 1/2 bn scallions, thinly sliced
- 1 x lemon, zested
- Â Â Fresh ginger, cut in matchsticks (optional)

- In a large stockpot, combine water, soy sauce, salt, star anise (if you like), ginger, scallions and sherry cooking wine and bring to a boil. Add in ribs and simmer 1 1/2 hrs or possibly till tender. Drain and throw away liquid. Set ribs aside.
- In a large mixing bowl, combine hoisin, soy sauce, sugar, lemon juice and rice vinegar and whisk till smooth. Set aside.
- Preheat oven to 450 degrees. Toss cooked ribs with sauce and ginger till well coated. Place ribs on a rimmed baking sheet and bake 5 min. Stir and bake an additional 5 min. Garnish with scallions and lemon zest. If you like, add in a sprinkle of ginger matchsticks.
