%20staring%20at%20our%20swimming%20pool%20thinking%20how%20weird%20it%20was%20to%20have%20it%20be%20that%20warmth%20with%20no%20leaves%20on%20the%20trees%20and%20our%20pool%20not%20up%20and%20running.%20When%20we%20bought%20our%20house,%20we%20weren't%20looking%20for%20a%20pool,%20but%20we%20were%20thrilled%20to%20have%20it%20as%20%22icing%20on%20the%20cake%22%20to%20the%20home%20we%20fell%20in%20love%20with.%20And%20believe%20me,%20a%20year%20later%20when%20I%20was%20hugely%20pregnant%20w/%20Alex%20in%20the%20heat%20of%20summer,%20I%20was%20so%20happy%20we%20had%20it!%20So%20as%20I%20was%20sitting%20there%20day%20dreaming%20of%20pool%20parties%20gone%20by,%20it%20got%20me%20to%20thinking%20of%20new%20foods%20I%20could%20serve%20for%20our%20next%20one,%20even%20if%20it%20is%20a%20couple%20months%20from%20now.%20Corn%20on%20the%20cob%20is%20always%20such%20a%20hit%20at%20backyard%20barbecues,%20but%20I%20think%20it%20can%20be%20a%20little%20awkward%20to%20eat%20while%20balancing%20your%20plate%20in%20your%20lap,%20and%20it%20could%20be%20jazzed%20up%20a%20little.%20That's%20when%20I%20thought%20of%20this.%20First%20off,%20cutting%20the%20cobs%20in%20half,%20for%20smaller,%20easier%20to%20handle%20portions%20(especially%20for%20kids)%20and%20two,%20adding%20a%20topping%20to%20it.%20Or%20even%20offering%20a%20topping%20on%20the%20side%20to%20be%20sprinkled%20on%20top,%20if%20your%20guests%20desire.%20Plus,%20if%20you%20want%20to%20make%20them%20when%20corn%20isn't%20in%20season,%20you%20can%20always%20buy%20the%20mini%20frozen%20cobs,%20which%20is%20actually%20what%20I%20had%20on%20hand.%20I%20can%20see%20it%20now:%20A%20group%20of%20our%20closest%20family%20and%20friends,%20gathered%20around%20our%20backyard,%20splashing%20in%20the%20pool,%20Adam%20manning%20the%20grill,%20and%20a%20huge%20spread%20of%20burgers,%20hot%20dogs%20and%20all%20those%20summer%20time%20favorites%20alongside%20a%20big%20platter%20of%20these!%20But%20since%20we%20have%20to%20wait%20a%20tad%20longer%20for%20those%20parties,%20these%20would%20also%20make%20a%20great%20addition%20to%20your%20Easter%20meal,%20especially%20if%20you%20are%20entertaining%20a%20crowd;%20much%20easier%20to%20handle%20while%20hunting%20all%20those%20eggs!!!%3C/p%3E%3Cp%3EMini%20Parmesan%20Corn%3C/p%3E%3Cp%3EMakes%206%20mini%20ears%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20water%20to%20a%20boil.%20Add%20corn%20and%20cook%20until%20fork%20tender,%20about%206%20minutes.%20Remove%20and%20drain%20well.%20Combine%20cheese%20and%20parsley,%20mix%20well.%20While%20corn%20is%20still%20hot,%20using%20a%20pastry%20brush,%20coat%20each%20ear%20of%20corn%20w/%20butter%20and%20sprinkle%20w/%20topping.%20Let%20stand%20about%201%20minute%20so%20topping%20%22sticks.%22%3C/p%3E%3Cp%3ECorn%20at%20Very%20Good%20Recipes%3C/p%3E%3Cp%3EPin%20It%3C/p%3E){kind=link}
