Ingredientes

  • 2 c. flour, sifted
  • 1/4 c. sugar
  • 1 1/2 tsp baking pwdr
  • 1 pch salt
  •     grated zest of one orange
  • 1 Tbsp. poppy seeds
  • 1/3 c. cool butter
  • 1/8 c. fresh orange juice
  • 1/2 c. lowfat milk
  • 1/4 c. 35% cream
  •     Mixed Berry Sauce
  • 1 1/2 c. mixed frzn berries
  • 1/2 c. sugar
  • 1 x juice of one lemon
  • 1 Tbsp. cornstarch
  •     Flavoured Whipped Cream
  • 1 c. 35% cream
  • 1 Tbsp. Grand Marnier liqueur

Direcciones

  1. Combine sifted flour, sugar, baking pwdr and salt in a bowl. Add in orange zest and poppy seeds.
  2. Cut in cool butter till mix resembles coarse meal.
  3. Combine orange juice, lowfat milk, and cream. Add in liquid gradually to dry ingredients. Mix till dough just comes together.
  4. Roll dough out to 3/4-inch thickness. Cut into 21/2-inch rounds.
  5. Line a baking sheet with parchment paper. Place shortcakes onto baking sheet and freeze. If you wish to leave these in the freezer for a later date, wrap the cakes in 2 layers of plastic wrap and keep in freezer. Bake at 375 degrees F. for 20 to 30 min straight from the freezer.
  6. Mixed Berry Sauce:Combine all ingredients in a saucepan. Bring to a boil and let simmer for 5 min till cornstarch cooks out.
  7. Flavoured Whipped Cream:Whip cream with Grand Marnier. Spoon berry sauce over shortcakes and top with flavoured whipped cream.
