Receta Porcini Mushroom Dry Rub

So, I was watching The Chew, yep ~ that entertaining crew is such a inspiration ~ and I saw Mario making a dry rub out of dried porcini mushrooms. Duh! Why hadn’t I thought of this? I immediately had to do a Cavegirl version. Best. Steak. Ever. Thanks Batals (I’m summoning my inner Symon)…you are amazing!
Rub your steak while your cast iron is heating up. Add a little ghee or duck fat and rosemary. Spoon this mixture over your meat and then finish it off in the oven until desired doneness is reached (I like mine mid-rare, so I take it up at 128 degrees F ~ it continues to cook up to temp when you let it set). Let is set on the cutting board for about 5 minutes before slicing or serving. Perfection.
Porcini Mushroom Steak Rub
Ingredients
0.5 ounces (about 1/4 cup) dried porcini mushrooms
2 teaspoon organic coconut palm sugar
1 tablespoon sea salt
2 teaspoons black peppercorns
1 teaspoon smoked paprika
1 teaspoon dried minced garlic
Directions
Place all ingredients into a spice grinder or a small food processor. Pulse until powdered.
Store in an air-tight container until ready to use.
