%20that%20I%E2%80%99d%20bring%20you%20a%20new%20flavor%20to%20drool%20over%20every%20week.%3C/p%3E%3Cp%3EAnd,%20my%20dearies,%20I%20have%20failed%20you.%3C/p%3E%3Cp%3ESummer%20has%20gotten%20away%20from%20me,%20and%20as%20I%E2%80%99m%20sure%20you%20can%20all%20relate%20to,%20we%E2%80%99ve%20been%20so%20busy%20that%20it%20completely%20escaped%20me.%3C/p%3E%3Cp%3EWell,%20its%20time%20to%20rectify%20that.%3C/p%3E%3Cp%3ERIGHT.%20NOW.%3C/p%3E%3Cp%3EIt%20is%20my%20great%20pleasure%20to%20present%20to%20you.....Dark%20Chocolate%20Bacon%20Sorbet.%3C/p%3E%3Cp%3EYes,%20you%20heard%20me%20right.%20BACON.%3C/p%3E%3Cp%3EI%20ran%20across%20this%20recipe%20when%20I%20was%20doing%20a%20little%20recon%20mission%20before%20making%20Chocolate%20Covered%20Bacon%20earlier%20this%20summer.%20I%E2%80%99ve%20had%20the%20recipe%20posted%20next%20to%20my%20stove%20for%20ages.%20I%20made%20a%20special%20stop%20in%20the%20city%20to%20get%20dutch%20processed%20cocoa.%20And%20yet.....I%20dropped%20the%20ball.%3C/p%3E%3Cp%3EMaybe%20it%20was%20because%20every%20time%20I%20make%20bacon,%20it%20mysteriously%20disappears....hmmm....might%20have%20to%20look%20into%20that.%20I%20bet%20it%20has%20something%20to%20do%20with%20a%20pork-pilfering%20husband....%3C/p%3E%3Cp%3EBUT%20FEAR%20NOT!!%3C/p%3E%3Cp%3EThe%20time%20has%20come.%20Yesterday%20I%20served%20up%20a%20big%20breakfast%20for%20my%20family....and%20I%20made%20THREE%20pounds%20of%20bacon.%20Yep,%20that%20way%20I%20was%20sure%20to%20have%20enough%20leftover%20for%20this%20recipe.%20Nonetheless,%20I%20still%20made%20the%20sorbet%20the%20same%20day,%20just%20in%20case%20the%20hubs%20fell%20prey%20to%20a%20cured%20meat%20craving.%3C/p%3E%3Cp%3EI%20took%20the%20crispiest%20pieces%20(the%20recipe%20said%208%20slices,%20but%20c%E2%80%99mon....I%20bet%20I%20doubled%20that)%20and%20chopped%20them%20up%20into%20crunchy%20bits.%20In%20the%20end,%20I%20decided%20that%20next%20time%20(and,%20oh%20yes,%20there%20WILL%20be%20a%20%E2%80%9Cnext%20time%E2%80%9D)%20I%20will%20add%20even%20more%20bacon.%20The%20original%20recipe%20called%20for%20%E2%80%9Ccandying%E2%80%9D%20the%20bacon,%20by%20means%20of%20dredging%20it%20in%20sugar%20and%20then%20baking%20it%20in%20the%20oven,%20but%20it%20also%20mentioned%20that%20it%20may%20have%20diminished%20the%20flavor%20of%20the%20bacon,%20so%20I%20chose%20not%20to%20candy%20mine.%20I%E2%80%99m%20a%20risk-taker,%20what%20can%20I%20say.....%3C/p%3E%3Cp%3EI%20assembled%20the%20base%20for%20the%20sorbet.%20And%20let%20me%20tell%20you,%20it%20is%20so%20rich%20and%20intensely%20chocolatey,%20you%20would%20never%20in%20a%20million%20years%20guess%20that%20there%20is%20no%20dairy%20in%20this.%20And,%20its%20dark%20chocolate,%20so%20its%20good%20for%20you,%20too...right?%3C/p%3E%3Cp%3EYou%20could%20make%20this%20with%20any%20chocolate%20you%20like,%20but%20for%20me,%20darker%20is%20better,%20so%20I%20used%20about%2070%25%20dark%20chocolate.%3C/p%3E%3Cp%3E(okay,%20okay,%20so%20I%20got%20distracted%20when%20I%20got%20home%20yesterday%20and%20its%20a%20little%20melty...but%20you%20know%20what?%20It%20sure%20tasted%20good%20drizzled%20all%20over%20those%20slices%20of%20bacon!)%3C/p%3E%3Cp%3ESift%20the%20cocoa%20to%20remove%20any%20lumps,%20then%20chop%20the%20chocolate%20into%20small%20pieces%20and%20combine%20it%20with%20the%20cocoa.%3C/p%3E%3Cp%3EIn%20a%20saucepan,%20combine%202%201/4%20cups%20water,%20sugar%20and%20corn%20syrup.%20Bring%20the%20mixture%20to%20a%20boil%20and%20then%20remove%20it%20from%20the%20heat.%3C/p%3E%3Cp%3ESlowly%20whisk%20the%20sugar%20syrup%20into%20the%20chocolate%20mixture.%20Don%E2%80%99t%20worry%20if%20the%20chocolate%20seizes%20on%20you,%20just%20keep%20drizzling%20the%20syrup%20into%20it%20and%20it%20will%20smooth%20out.%20Continue%20whisking%20this%20mixture%20for%20about%20five%20minutes,%20until%20you%20think%20it%E2%80%99s%20smooth%20and%20silky.%20Cool%20the%20mixture%20over%20an%20ice%20bath%20(fill%20a%20bowl%20larger%20than%20the%20one%20your%20base%20is%20in%20with%20ice%20cubes%20and%20water.%20Place%20your%20bowl%20inside%20the%20icy%20bowl,%20and%20continue%20to%20whisk%20it%20until%20it%20is%20cool).%20Place%20your%20base%20in%20the%20refrigerator%20to%20cool%20completely%20and%20thicken%20for%20a%20few%20hours.%3C/p%3E%3Cp%3EAfter%20the%20sorbet%20base%20has%20cooled%20for%20a%20few%20hours,%20freeze%20it%20in%20your%20ice%20cream%20machine%20according%20to%20manufacturer%E2%80%99s%20instructions.%20At%20the%20last%20minute,%20funnel%20the%20bacon%20bits%20into%20the%20opening%20on%20the%20machine%20and%20stop%20the%20machine%20as%20soon%20as%20it%20is%20just%20mixed%20in.%20Your%20machine%E2%80%99s%20motor%20will%20protest%20if%20you%20let%20it%20churn%20too%20long%20with%20the%20chunks%20in%20it.%20Pour%20into%20a%20storage%20container%20and%20put%20it%20in%20the%20freezer%20until%20it%20reaches%20the%20desired%20firmness.%3C/p%3E%3Cp%3E***I%20would%20probably%20save%20some%20bacon%20bits%20for%20garnish,%20also.%20I%20think%20it%20would%20add%20something%20to%20it%20to%20have%20the%20plain%20bacon%20on%20top%20as%20well%20as%20mixed%20in.%20This%20sorbet%20I%20so%20rich,%20you%20don%E2%80%99t%20need%20very%20much%20to%20get%20your%20chocolate%20fix.%3C/p%3E%3Cp%3EThere%20you%20have%20it,%20folks.%20Bacon....for%20dessert.%20Now,%20don%E2%80%99t%20despair,%20I%20still%20have%20a%20couple%20more%20bacon%20recipes%20to%20share%20with%20you,%20and%20hopefully%20I%E2%80%99ll%20get%20them%20up%20for%20your%20drooling%20pleasure%20much%20more%20quickly%20than%20I%20did%20with%20this%20one.%20Buon%20Appetito!%3C/p%3E){kind=link}
