Ingredientes

  • 1 Tbsp. oil
  • 1 x slab bacon - (8 ounce) cut large dice
  • 1 lb pork shoulder cut into 1" cubes
  • 1 x onion thinly sliced
  • 12 ounce light German beer
  • 12 ounce chicken stock or possibly more, to cover
  • 1 lb garlic sausage sliced 1/4" thick
  • 1 head cabbage sliced thinly
  • 2 x Granny Smith apples peeled, seeded,
  •     and sliced 1/4" thick
  • 2 lb waxy potatoes, like Yukon Golds sliced 1/4" thick
  • 1 tsp caraway seeds
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 loaf crusty bread

Direcciones

  1. In a large casserole, heat the oil, brown the bacon and pork, remove from the pan, and set aside. Add in the onions and saute/fry over low heat for 10 min. Add in the browned meat, beer, and sufficient chicken stock to cover. Bring to a boil and simmer for 45 min.
  2. Preheat oven to 350 degrees.
  3. Add in the sausage, cabbage, apples, potatoes, and caraway seeds and season with salt and pepper. Cover and cook in the oven till meat is tender, about 45 min. Serve with crusty bread.
  4. This recipe yields 6 to 8 servings.
