Pork Chop & Rice Dinner

Ingredientes

  • 4 (1/2" thick) lean pork chops
  • 1/4 teaspoon pepper
  • Vegetable cooking spray
  • 1/4 c. diced onion
  • 1/4 c. diced green pepper
  • 1/2 c. uncooked regular rice
  • 1 (28 ounce.) can tomatoes, undrained & minced
  • 1/4 c. water
  • 1/2 teaspoon salt
  • 1/2 teaspoon prepared mustard

Direcciones

  1. Trim excess fat from chops; sprinkle with pepper. Coat a large skillet with cooking spray; place over medium heat till warm. Add in chops and cook till browned on both sides.
  2. Remove chops and drain on paper towels; wipe pan drippings from skillet with a paper towel. Coat skillet with additional cooking spray. Add in onion and green pepper to skillet and saute/fry till tender. Stir in rice, tomatoes, water, salt and mustard. Add in pork chops. Bring to a boil; cover, reduce heat and simmer 25 to 30 min or possibly till rice is tender and chops are done.
