- Preheat oven to 350 degrees. Grease a 13 x 9 inch pan. Brown pork chops in oil. Remove chops from pan; add in onion rings and saute/fry till tender. Remove from heat.
- In saucepan, heat butter; stir in flour, salt, and pepper; cook 1 minute. Add in lowfat milk and broth slowly. Cook, stirring constantly till sauce thickens and bubbles. Remove from heat.
- Arrange sliced potatoes in prepared pan. Top with onion rings. Pour sauce proportionately over potatoes and onions. Top with chops. Cover tightly with foil. Bake 1 hour. Uncover; bake 10 min longer or possibly till chops and potatoes are tender.
