,%20roasted%20until%20they,%20too,%20were%20sweetly%20caramelized%20and%20golden%20brown.%3C/p%3E%3Cp%3EThe%20pork%20seasoned%20and%20then%20browned%20until%20golden%20also,%20and%20then%20finished%20off%20in%20the%20oven%20.%20.%20.roasted%20til%20done%20.%20.%20.%20but%20still%20moist%20and%20oh%20so%20delicious.%3C/p%3E%3Cp%3EThe%20two%20together,%20simply%20heavenly%20.%20.%20.%20one%20might%20think%20that%20it%20couldn't%20get%20any%20better%20than%20this%20.%20.%20.%20but%20.%20.%20.%20you%20should%20really%20know%20me%20better%20than%20that%20by%20now%20.%20.%20.%3C/p%3E%3Cp%3EI%20added%20a%20sweet%20and%20tangy%20Apple%20Relish%20.%20.%20.%20apples,%20celery,%20mint,%20basil,%20apple%20cider%20balsamic%20vinegar,%20olive%20oil%20.%20.%20.%20heaven%20.%20.%20.%20bliss%20.%20.%20.%20oh%20so%20moreishly%20good.%3C/p%3E%3Cp%3EThis%20was%20dinner%20today,%20and%20I%20have%20a%20feeling%20that%20it%20will%20be%20dinner%20again%20.%20.%20.%20very%20soon.%3C/p%3E%3Cp%3E*Pork%20and%20Roots%20Traybake%20with%20an%20Apple%20Relish*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EA%20one%20pan%20meal%20that%20is%20delicious.%20Crispy%20roasted%20vegetables.%20Tender%20moist%20chops%20and%20a%20sweet%20and%20tangy%20relish%20that%20goes%20very%20well%20with%20it%20all!%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20190*C/375*F/%20gas%20mark%206.%20Peel%20and%20chop%20your%20vegetables.%20(Peel%20and%20cut%20the%20carrots%20in%20half%20crosswise%20and%20then%20in%20half%20lengthwise,%20cut%20the%20swede%20into%20long%20slices%20the%20size%20of%20your%20fingers,%20cut%20the%20potatoes%20and%20sweet%20potatoes%20into%20large%20chinks,%20(no%20need%20to%20peel)%20peel%20onions,%20and%20cut%20into%20wedges).%20Place%20into%20a%20roasting%20pan.%20Toss%20with%20the%20olive%20oil,%20salt,%20pepper,%20summer%20savoury%20and%20paprika%20to%20coat.%20Spread%20out%20and%20then%20roast%20in%20the%20heated%20oven%20for%20about%2035,%20minutes,%20stirring%20after%2015%20minutes.%20They%20should%20be%20well%20on%20their%20way%20to%20golden.%3C/p%3E%3Cp%3EHeat%20a%20large%20nonstick%20frying%20pan%20that%20you%20have%20sprayed%20with%20some%20nonstick%20cooking%20spray.%20Season%20the%20chops%20with%20salt,%20pepper%20and%20summer%20savoury.%20Brown%20well%20on%20all%20sides%20in%20the%20heated%20frying%20pan,%20browning%20the%20fat%20as%20well.%20Place%20them%20on%20top%20of%20the%20roasting%20vegetables.%20Roast%20for%20another%2015%20to%2020%20minutes.%20Allow%20to%20stand%2010%20minutes%20before%20serving.%3C/p%3E%3Cp%3EFor%20the%20relish,%20heat%201%20TBS%20of%20the%20oil%20in%20a%20clean%20skillet.%20Add%20the%20celery%20and%20apple%20and%20cook,%20without%20browning%20for%20several%20minutes%20until%20softened,%20stirring%20occasionally.%20Leave%20to%20cool.%20Whisk%20the%20vinegar%20with%20some%20sugar%20in%20a%20bowl.%20Stir%20in%20the%20apple/celery%20mixture%20and%20season%20with%20salt%20and%20pepper.%20Whisk%20in%20the%20remainder%20of%20the%20olive%20oil%20along%20with%20the%20herbs.%3C/p%3E%3Cp%3EDivide%20the%20roasted%20vegetables%20amongst%204%20heated%20plates.%20Top%20each%20with%20a%20chop%20and%20some%20of%20the%20apple%20relish.%20Delicious!%3C/p%3E){kind=link}
