%20%20with%20cooking%20;%20the%20overstuffed%20freezer,%20cupboards%20and%20even%20garage%20(%20currently%20home%20to%20sacks%20of%20chillis)%20,%20questioning%20about%20whether%20something%20tastes%20OK%20before%20it%20has%20even%20made%20it%20into%20his%20mouth%20,%20and%20admittedly%20the%20odd%20sulk%20because%20a%20dish%20has%20not%20turned%20out%20just%20so%20,even%20if%20it%20tastes%20fine.%3C/p%3E%3Cp%3EIn%20fact%20I%20watched%20Julie%20and%20Julia%20alone%20with%20recognition%20and%20growing%20shame%20especially%20the%20point%20where%20she%20ends%20up%20lying%20in%20a%20pile%20of%20grease%20on%20the%20floor%20crying%20and%20screaming%20abuse%20at%20her%20husband.%20%20I%20replicated%20this%20scene%20recently%20when%20a%20batch%20of%20mayonnaise%20refused%20to%20thicken.%20%20I%20was%20hysterical%20and%20inconsolable%20,%20over%20mayonnaise,%20I%E2%80%99m%2032%20for%20heavens%20sake.%3C/p%3E%3Cp%3ENick%20is%20the%20polar%20opposite%20calm,%20patient,%20practical%20and%20easygoing.%20Only%20very%20occasionally%20mentioning%20that%20things%20might%20be%20getting%20a%20little%20out%20of%20hand%20as%20a%20packet%20of%20unsealed%20lentils%20falls%20on%20his%20head%20and%20%20suggesting%20he%20might%20write%20a%20more%20honest%20account%20%20%E2%80%9CLiving%20with%20a%20Girl%20Interrupted%20Eating%E2%80%9D.%3C/p%3E%3Cp%3ESo%20I%20detected%20a%20little%20caution%20in%20his%20%E2%80%9CGreat?!%E2%80%9D,%20when%20I%20said%20I%20was%20going%20to%20make%20a%20Pork%20Pie%20for%20%20his%20birthday%20instead%20of%20cake%20.%20Of%20course%20he%20loves%20Pork%20Pie%20but%20here%20in%20the%20East%20Midlands%20we%20are%20surrounded%20by%20award%20winning%20pies%20so%20there%20is%20lot%20to%20live%20up%20to%20in%20making%20your%20own.%3C/p%3E%3Cp%3EI%20admit%20I%20was%20a%20little%20worried%20too,%20%20I%20suspected%20pork%20pies%20were%20difficult%20to%20make%20special%20pastry%20and%20a%20jelly%20stock.%20%20In%20fact%20although%20need%20a%20long%20day%20to%20make%20this%20pie,it%20is%20really%20just%20a%20series%20of%20short%20easy%20%20interventions,%20making%20the%20stock%20,%20mixing%20the%20pastry%20and%20filling%20the%20pie.%20All%20of%20which%20are%20easier%20I%20think%20than%20poaching%20a%20decent%20egg%20%E2%80%93%20hysterical%20fit%20number%202%20this%20year.%20%20The%20time%20taken%20is%20due%20only%20to%20the%20%20jelly%20stock%20needing%20time%20to%20cool%20to%20check%20%20it%20has%20a%20good%20set,%20and%20the%20%20pie%20will%20%20needing%20to%20cool%20overnight%20before%20eating.%3C/p%3E%3Cp%3EI%20was%20so%20happy%20taking%20the%20golden%20pie%20out%20of%20the%20oven%20yesterday-%20%20it%20looked%20just%20like%20pies%20in%20picture%20books.%20%20Once%20sliced%20by%20the%20birthday%20boy%20I%20was%20pleased%20with%20the%20colour%20and%20the%20texture%20of%20the%20filling%20chopped%20belly%20pork%20gammon%20and%20was%20perfect,%20with%20wavy%20hot%20crust%20pastry%20,%20it%20even%20has%20plenty%20of%20jelly%20down%20the%20sides%20%E2%80%93%20just%20like%20a%20real%20pie.%20I%20cannot%20wait%20to%20make%20more%20pies,%20be%20warned%20family%20it%E2%80%99s%20pie%20for%20Christmas%20presents%3C/p%3E%3Cp%3ESo%20all%20Birthday%20smiles%20and%20no%20sulking.%20Happy%20Birthday%20Nick%20%E2%80%93%20Love%20you.%3C/p%3E%3Cp%3EPork%20Pie%3C/p%3E%3Cp%3EFor%20the%20stock:%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EJelly%20stock%20made%20the%20day%20before%20the%20pie%3C/p%3E%3Cp%3EPut%20the%20ham%20hock%20a%20deep%20saucepan%20with%20the%20onion,%20carrot,%20parsley%20stalks%20and%20the%20celery%20rib.%3C/p%3E%3Cp%3ECover%20with%20water%20and%20bring%20to%20the%20boil.%20Lower%20the%20heat%20to%20a%20simmer%20,%20cover%20the%20pot%20and%20cook%20for%202%20hours.%3C/p%3E%3Cp%3ERemove%20from%20the%20heat,%20decant%20the%20liquid%20and%20reduce%20to%20400ml%3C/p%3E%3Cp%3ESet%20aside%20250g%20of%20the%20cooked%20hock%20for%20the%20pie%3C/p%3E%3Cp%3ERefrigerate%20the%20overnight%20then%20remove%20the%20fat%20from%20the%20top%20of%20the%20stock,%20transfer%20to%20a%20saucepan%20and%20bring%20to%20the%20boil.%3C/p%3E%3Cp%3EMaking%20the%20stock%20%20most%20recipes%20suggest%20using%20pigs%20trotters%20,%20my%20butcher%20didn%E2%80%99t%20have%20any%20but%20a%20ham%20hock%20makes%20a%20good%20alternative%20and%20set%20to%20a%20firm%20jelly.%3C/p%3E%3Cp%3EMake%20the%20pastry%3C/p%3E%3Cp%3EPut%20the%20lard%20and%20water%20into%20a%20small%20saucepan%20and%20bring%20to%20the%20boil.%3C/p%3E%3Cp%3ESift%20the%20flour%20with%20a%20good%20pinch%20of%20salt%20into%20a%20large%20bowl.%3C/p%3E%3Cp%3EPour%20the%20hot%20lard%20and%20water%20into%20the%20flour,%20mix%20with%20a%20wooden%20spoon,%20then%20leave%20until%20cool%20enough%20to%20handle.%20%20The%20pastry%20must%20be%20warm%20when%20you%20start%20to%20work%20it.%3C/p%3E%3Cp%3EMaking%20the%20pastry%20was%20easier%20than%20normal%20pastry%20,%20I%20love%20the%20smell%20of%20the%20warm%20lard%20it%20smells%20like%20Sunday%20Roast.%3C/p%3E%3Cp%3EMake%20the%20filling%3C/p%3E%3Cp%3EChop%20the%20pork,%20belly%20pork%20and%20gammon%20into%20small%20cubes,%20about%205mm%20in%20size.%3C/p%3E%3Cp%3EMix%20the%20herbs%20into%20the%20chopped%20meats%20together%20with%20the%20mace,%20white%20pepper,%20nutmeg%3C/p%3E%3Cp%3EFill%20the%20pie%3C/p%3E%3Cp%3ESet%20the%20oven%20at%20180C/gas%20mark%204.%3C/p%3E%3Cp%3ELightly%20grease%20a%2030cm%20round%20%20cake%20tin%20(with%20removable%20bottom).%3C/p%3E%3Cp%3EPull%20off%20a%20quarter%20of%20the%20pastry%20this%20will%20form%20the%20%20lid%20that%20will%20fit%20the%20top%20of%20the%20cake%20tin.%3C/p%3E%3Cp%3EPut%20the%20rest%20of%20the%20pastry%20into%20the%20bottom%20of%20the%20tin%20,%20push%20the%20dough%20up%20the%20sides%3C/p%3E%3Cp%3ESpoon%20the%20pork%20filling%20into%20the%20lined%20cake%20tin%20and%20press%20it%20down.%3C/p%3E%3Cp%3ELower%20the%20lid%20into%20place%20and%20press%20tightly%20to%20seal%20with%20the%20edges.%3C/p%3E%3Cp%3EPoke%20a%20small%20hole%20in%20the%20lid%20to%20let%20out%20the%20steam%20and%20put%20the%20tin%20on%20a%20baking%20sheet.%20Bake%20for%2030%20minutes,%20then%20lower%20the%20heat%20to%20160C/gas%20mark%203%20and%20bake%20for%2090%20minutes%20until%20the%20pastry%20is%20pale%20gold.%3C/p%3E%3Cp%3EBrush%20with%20the%20beaten%20egg%20and%20return%20to%20the%20oven%20for%2030%20minutes.%3C/p%3E%3Cp%3EAdding%20the%20jelly%20stock%3C/p%3E%3Cp%3EWhen%20the%20pie%20is%20ready,%20pour%20the%20stock%20into%20a%20jug%20and%20then%20pour%20it%20carefully%20through%20the%20hole%20in%20the%20top%20of%20the%20pastry%3C/p%3E%3Cp%3ELeave%20the%20pie%20to%20cool,%20then%20refrigerate%20overnight.%3C/p%3E){kind=link}
