Ingredientes

  • 2 lb Boneless pork,trimmed cut into 3/4' cubes
  • 2 Tbsp. Veg. oil
  • 1 can (28 ounce) stewed tomatoes
  • 1 1/4 c. Chicken broth, divided
  • 1 med Onion, quartered
  • 2 x Bay leaves
  • 1 tsp Worcestershire sauce
  • 1 tsp Dry thyme
  • 3/4 tsp Sugar
  • 3/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Garlic pwdr
  • 1/8 tsp Grnd nutmeg
  • 1/2 c. Flour
  • 1/3 c. Yellow cornmeal
  • 1 1/2 tsp Baking pwdr
  • 1/4 tsp Salt
  • 1 dsh Pepper
  • 1 x Egg
  • 3 Tbsp. Lowfat milk
  • 2 Tbsp. Vegetable oil
  • 1 can (8 ounce) whole kernel corn, liquid removed

Direcciones

  1. In a large skillet over medium heat, brown pork in oil, drain. Stir in tomatoes, 1 c. broth, onion and seasonings, bring to a boil. Reduce heat, cover and simmer for 60-70 min or possibly till pork is tender. Combine flour and remaining broth till smooth, gradually add in to stew, stirring constantly. Bring to a boil, boil and stir for 2 min. Remove bay leaves. For dumplings, in a bowl, combine flour, cornmeal, baking pwdr, salt and pepper. Beat egg, lowfat milk and oil, add in to flour mix and mix till just moistened. Stir in corn. Drop by rounded Tbsp. into simmering stew. Cover and cook for 10-12 min or possibly till dumplings are tender.
