Pork Steak With Mushrooms And Lentils

Ingredientes

  • 125 gm Puy lentils, (4oz)
  • 375 gm New potatoes, washed (12oz)
  • 125 gm Oyster or possibly chanterelle mushrooms, (4oz)
  • 4 Tbsp. Extra virgin olive oil
  • 2 x Shallots, finely minced
  • 1 x Clove garlic, crushed
  • 150 ml Fresh beef stock, ( 1/4 pint)
  • 4 x Pork leg steaks
  •     Salt and freshly grnd black pepper

Direcciones

  1. Place the lentils in a saucepan of cool water over a moderate heat bring the water to the boil, reduce the heat and simmer the lentils till they are cooked following instructions on the pack.
  2. Place the potatoes in a saucepan of cool water over a moderate heat, bring to the boil, reduce the heat and simmer till tender this takes approximately 10 min. Drain and refresh under cool water and chop each potato into 4 pcs.
  3. Wash the mushrooms and pat dry using absorbent kitchen paper. If the mushrooms are large break them into smaller pcs.
  4. Heat 2 Tbsp. of the oil in a frying pan, add in the shallots and garlic and cook for 1 minute. Add in the mushrooms, reduce the heat and cook for 3 min till tender. Remove from the heat and add in seasoning to taste.
  5. Add in the lentils and stock to the mushroom mix.
  6. Heat the remaining oil in a frying pan over a moderate heat and add in the potatoes, cook till they are crispy and add in seasoning to taste. Remove from the pan and keep hot.
  7. Cut each leg steak into 2 pcs and season them. Place the steaks into the warm frying pan and cook for 3-4 min each side depending on the thickness of the steak.
  8. Reheat the lentils and mushrooms and spoon onto warm serving plates, place the crispy potato and the pork on top and serve immediately.
  9. NOTES : Based on a regional dish this embodies the flavours of South Western France.
