Receta Pork Steak with Mustard Brown Sauce
To get pork steaks I buy a loin roast – checking both ends of the roast to make certain I get a nice center cut. Then I slice it into chops / steaks. Normally they are more tender than the chops I can buy and I get the thickness I want.
This sauce would work equally well with real, beef steaks…. and probably be pretty tasty on chicken.
Pork Steak with Mustard Brown Sauce
Total time: 20 minutes
Ingredients:
- 2 thick slices lean pork, 12oz (360gr) total weight
- 1/2 tsp paprika
- 2 tsp olive oil
- 1 tbs fresh sage, chopped
- 1/2 cup (4oz, 120ml) beef stock
- 1 tbs ketchup
- 1 tbs Dijon-style mustard
- 2 tsp cornstarch (maizena) dissolved in 1 tbs water
- 1/2 cup (4oz, 120gr) Greek yogurt
Instructions:
Sprinkle paprika on pork.
Heat oil in a medium skillet, medium-high heat.
Add pork and sauté until nicely browned, turning once, about 6 minutes.
Add sage, beef stock, cover and simmer 5 minutes longer.
Remove chops to a plate and cover to keep warm.
Stir in the ketchup, mustard and bring to a simmer
Add cornstarch mixture and stir until thickened.
Remove from heat and stir in yogurt.
Spoon sauce over steaks and serve.

I have a sudden urge to do things, fun things, lots of things…. There are places to see, foods to eat, traveling to be done.
I was just 30 when I had a friend die of ‘natural causes’ (as opposed to a car accident, or the like).
The friend was much older – 40 (yes, I know, perspective) and died of a heart attack. At the time I thought it was a fluke, something that happened but an uncommon occurrence relative to my life.
Those occurrences are becoming more common.
It’s likely a combination of getting older and knowing more people…. who are also getting older.
Living in an expat community, which we have for the past many years, we have a wide range of friends and acquaintances from many countries and spanning many ages. In my French class there is a young mother and a great-grandmother and every age in-between
We lost two this month….. Neither would be considered old, early to mid 60′s.
One was after a brief illness, one with no warning, but both with plans to ‘do more when there’s time’,
I just decided it’s time.
It’s definite.
I’m ready to start doing some serious playing.
I’m going to do more of the ‘work’ that I enjoy and less of the stuff I seriously dislike.
Ironing is significantly over-rated anyway.
Oh – and eat more chocolate!
So – do as I say (and hope to do) start having more fun!
