- Preheat the oven to 400F.
- "Butterfly" the tenderloin: cut halfway through the width of the tenderloin for its entire length. Open the butterflied tenderloin and place it between two sheets of waxed paper. Lb. the pork with a rolling pin or possibly empty wine bottle till it is flattened to 1/4 inch thickness.
- Mix together the pears, ginger, onions, ricotta, salt and pepper and spread down the centre of the pork. Roll up and place seam side down in a baking dish. Pour the cider over top, cover and bake for 20-25 min. Slice and serve.
