Receta Pork Tenderloin with Mushroom Sauce
Even though we continue to have warm days I can tell winter is coming.
We saw the first mouse of the season run across the floor the other night. And we’ve been hearing them in the ceiling.
The mornings are very wet with dew so I have to get the serious rubber shoes out to walk the dogs. Plus the sun is coming up so late I’m walking them when it’s barely light out.
Definitely time for winter cooking….
Pork Tenderloin with Mushroom Sauce
Total time: 30 minutes
Ingredients:
- 1 pork tenderloin, 12oz (360gr), sliced, 1″ rounds
- 4oz (120gr) mushrooms, roughly chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1 tsp dried marjoram
- 1/2 cup (4oz, 120ml) beef stock
- 1/4 cup (2oz, 60ml) sherry
- 2 tbs tomato paste
- 1 tbs olive oil
Instructions:
Heat oil in medium nonstick skillet. Add pork slices and brown on bot sides
Remove and set aside.
Add onions, garlic, mushrooms and sauté until onions are tender and mushrooms start to brown.
Add spices to skillet and sauté 1 minute longer.
Add marjoram, stock, sherry and tomato paste. Stir to combine.
Return pork to skillet, turning to coat.
Cover, reduce heat to low and simmer 10 minutes.
Serve pork with mushroom pan sauce.
Usually we are busy stacking wood this time of year.
Mon mari has taken over the wood platform as his new work area.
Instead of stacking wood he’s stacking bricks.
He has two different colors of sand to use as well as special color pigments to add to the cement when he mixes it.
Here’s a close-up of all the different colors of bricks. We’re going to have a very pretty walkway.
You can see the two molds he is using – a double one on the table and a single on the ground.
He wants to let them cure for a few more weeks so we’ll do the walkway when we get back from Paris.
As to the wood….. We have enough in the barn for this winter so we’ll worry about getting more for next winter later.
Another preparation for winter….. Opposite our house is a hill. In the winter, when we have constant rain, the ground becomes saturated. When it does, it drains down the hill and ends up in our driveway and side lawn turning it all into a big mud pit.
Mon mari has dug out under the gate and is putting in drain pipes. The plan is to divert the water to the field before it can get inside the gate.
We are most pleased with this plan.
