Ingredientes

  • 2 1/2 lb Lean pork
  • 1 c. Oil
  • 1/2 tsp Mustard
  • 1 c. Vinegar
  • 5 x Green chillies minced
  • 1 x Half-inch cube ginger minced
  • 1 tsp Turmeric
  • 2 tsp Salt
  • 1 sprg curry leaves
  •     Spices to be grnd together
  • 30 x Red chillies
  • 1/2 ounce Garlic
  • 1 x Half-inch cube ginger
  • 2 tsp White cummin
  • 2 tsp Mustard
  • 1 lrg Onion
  • 1 x (2/3-inch) stick cinnamon
  • 3 x Cloves

Direcciones

  1. Cube pork. Heat oil, season with mustard. Add in sliced green chillies and ginger and fry till dry. Add in grnd spices with turmeric pwdr and fry till oil starts to separate. Add in meat and curry leaves and mix well. Fry 3 5 min.
  2. Add in vinegar and salt. cover and cook on slow stove till meat is tender and oil floats to the top, about 1 1/2 to 2 hrs. Don't add in water!
  3. This is and oldie but a goodie.
