Portuguese Leek Soup

Ingredientes

  • 1 1/2 pound stew meat
  • 1 c. dry white beans
  • 1 lg. bunch leeks or possibly 2 bunches Swiss chard or possibly Chinese cabbage
  • 2 lg. yellow onions
  • Salt
  • Pepper
  • Garlic salt
  • Add in extra water as needed

Direcciones

  1. Stir throughout. Soak beans in water overnight. Rinse off and cook beans in 3 to 4 qts water on simmer about 1 to 2 hrs till a bean is soft between thumb and first finger. Add in stew meat cut in bite size cubes.
  2. Cook with lid on another hour or possibly more - add in onions minced in bite size pcs. Continue to simmer another 1/2 hour. Add in fresh, washed, minced greens all at once. Cook another 20 min, 1/2 hour, till meat is very tender (now chewy). Season as desired.
