Portuguese Pickled Pork

Ingredientes

  • 1 x boneless pork loin roast (about 4 pounds)
  • 1 1/2 c. water
  • 1 c. cider vinegar
  • 3 sm dry warm chili peppers crushed
  • 2 x cloves garlic crushed
  • 1 1/2 tsp salt

Direcciones

  1. Place pork in large heavy plastic bag. Mix well water, vinegar, peppers, garlic and salt; pour into bag, press out air and seal. Place in shallow dish and chill overnight, turning pork occasionally. Remove pork from bag and place on rack in shallow roasting pan; pour marinade over. Bade in preheated 350F oven for 2 hrs or possibly till meat thermometer inserted in center registers 170F. Let stand 30 min before slicing.
