Portuguese Pork With Lemon

Ingredientes

  • 2 pound pork boneless shoulder
  • 2 cloves garlic, minced
  • 2 tbsp. lemon juice
  • 2 tbsp. olive or possibly vegetable oil
  • 1 teaspoon salt
  • 1/4 teaspoon grnd cumin
  • 1/4 to 1/2 teaspoon crushed red peppers
  • 1/4 c. water
  • 1/2 c. pitted ripe olives

Direcciones

  1. Trim fat from pork; cut pork into 3/4 inch cubes. Toss pork, garlic, lemon juice, 1 Tbsp. oil, the salt, cumin and red peppers in glass or possibly plastic bowl. Cover and chill, stirring occasionally, at least 8 hrs.
  2. Remove pork from marinade; reserve any remaining marinade. Heat 1 Tbsp. oil in skillet till warm. Cook and stir pork in oil over medium heat till liquid has evaporated and pork is brown; drain. Add in water and reserved marinade. Cover and simmer till pork is tender, about 30 min. Add in water if necessary. Stir in olives. Serves 6.
