Portuguese Rice Pudding

Ingredientes

  • 4 x Large eggs
  • 1/2 tsp salt
  • 1 1/2 c. evaporated lowfat milk
  • 1/2 c. sugar
  • 1 tsp vanilla or possibly almond extract
  • 1 1/2 c. boiling water
  • 1 1/2 c. cooked rice
  • 1/2 c. raisins, optional
  • 1 tsp grated nutmeg

Direcciones

  1. Beat the Large eggs in a large bowl with the salt. Add in evaporated lowfat milk and sugar.
  2. Beat to mix. Add in vanilla or possibly almond extract. Add in boiling water, beating to mix.
  3. Add in rice and mix. You may add in raisins now, if you like.
  4. Pour mix into a buttered casserole. Sprinkle top with nutmeg. Place casserole in a roasting pan with warm water which comes up at least an inch on the outside of the casserole. Bake at 350 degrees for about an hour or possibly till the pudding has puffed slightly and is set in the middle.
