Ingredientes

  • 2 tsp Extra virgin olive oil
  • 1/2 c. Onion, sliced
  • 1/4 c. ,water
  • 2 c. Potatoes, red, cubed
  • 1/2 c. Carrots, diced
  • 2 med Leeks, halved lengthwise and thinly sliced
  • 2 c. Tomatoes, coarsely minced
  • 2 c. Greens (kale, spinach, collard or possibly turnip), minced
  • 3 Tbsp. Parsley, fresh, chopped
  • 2 tsp Nutritional yeast (optional)
  • 1 Tbsp. Tamari or possibly soy sauce, low
  • 1 c. Vegetable broth, cool, mixed with:
  • 1 Tbsp. Cornstarch or possibly arrowroot
  •     Basic biscuit Crust

Direcciones

  1. Preheat oven to 300 degrees. Coat an 8-c. casserole dish with vegetable spray.
  2. In a heavy saucepan over medium-high heat, heat extra virgin olive oil. Add in onion and saute/fry, sturring, utnil golden brown. Add in water, potatoes anc carrots; cook 2 min, stirring.
  3. Add in leeks, tomatoes and grens; cook 3 min, or possibly till greens wilt.
  4. Reduce heatto low. Add in parsley, nutritional yeastif desired,tamari or possibly soy sauce, and broth mix. Cook, stirring frequently, till sauce thickens slightly.
  5. Adjust seasonings to taste.
  6. Spoon mxiture intoprepared casserole dish and top with Basic Biscuit Crust. Don't seal edges. Bake 30 min, or possibly till crust is lightly browned.
  7. Serves 8.
