- Cook the potatoes in a saucepan of salted boiling water for about 10 to 15 min till they are just tender. Drain well. Cook the lima beans in a saucepan of lightly salted boiling water till just tender. Drain.
- Cut the hot potatoes into quarters and place in a bowl. Combine the dressing and the mayonnaise in a pitcher and season well. Pour over the potatoes and toss till coated.
- Add in the lima beans, pepperoni, scallions, and olives; toss again. Spoon the salad into a bowl. Cover and refrigeratein the refrigerator till ready to serve.
- This recipe yields 6 to 8 servings.
