Ingredientes

  • 1 1/2 lb new potatoes - (abt 15) scrubbed
  • 1 pkt frzn lima beans - (abt 1/4 lb)
  • 6 Tbsp. French dressing
  • 2/3 c. mayonnaise
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 3/4 c. sliced pepperoni
  • 1 bn scallions thinly sliced
  • 2/3 c. pitted ripe olives

Direcciones

  1. Cook the potatoes in a saucepan of salted boiling water for about 10 to 15 min till they are just tender. Drain well. Cook the lima beans in a saucepan of lightly salted boiling water till just tender. Drain.
  2. Cut the hot potatoes into quarters and place in a bowl. Combine the dressing and the mayonnaise in a pitcher and season well. Pour over the potatoes and toss till coated.
  3. Add in the lima beans, pepperoni, scallions, and olives; toss again. Spoon the salad into a bowl. Cover and refrigeratein the refrigerator till ready to serve.
  4. This recipe yields 6 to 8 servings.
