Potato, Broccoli, Cheese Soup

Ingredientes

  • 10 potatoes, scrubbed & cut into cubes (leave skin on)
  • 1 med. onion, minced
  • Head of broccoli, minced (including stems, peel outer edge near bottom)
  • 3 tbsp. fresh parsley, minced fine
  • Salt & pepper to taste
  • 3/4 c. lowfat milk
  • 2 c. shredded cheddar cheese

Direcciones

  1. Place potatoes, onion and broccoli in large pan.
  2. Fill with water until vegetables are just barely covered.
  3. Cook on medium heat about 45 min until potatoes are tender.
  4. Remove from heat and mash vegetables and liquid with potato masher.
  5. Add in lowfat milk, parsley, salt and pepper.
  6. Add in cheese and simmer until cheese melts.
