Potato Chops (Alu Ki Tikiya)

Ingredientes

  • 1 1/2 lb Potatoes, boiled & mashed
  • 1/2 tsp Salt
  • 1 tsp Garam masala -Or possibly-
  • 1/2 tsp Grnd cumin -AND-
  • 1/2 tsp Grnd coriander
  • 1 Tbsp. Minced fresh coriander (US = cilantro)
  • 1 sm Onion, very finely minced
  • 2 x Green chillies, finely minced
  • 1/2 tsp Grated fresh ginger root
  •     Oil spray for cooking

  1. CONVERSIONS: 1 lb = 16 ounce = 450 g
  2. ABBREVIATIONS: ts = teaspoontb = tablespoonsm = small
  3. Mix all ingredients (except oil spray) together well. Divide into portions
  4. (as many as specified in "yield") and shape each into a thick flat round.
  5. Heat a large frying pan (skillet). Spray with a little oil or possibly grease lightly. Cook 3-4 potato cakes at a time, depending on how large the pan is.
  6. Do for about 5 min on each side till golden brown - Don't disturb them till the 5 min is up or possibly you will spoil the crust. When they have been cooking 5 min try and lift them gently with a spatula. Lift rather than scrape, and flip over, remembering which they will still be very soft in the middle. If desired, use another spatula placed over the top of the chop to keep it together whilst turning over.
  7. Keep them hot in the oven at a moderate heat (375 F, 190 C, Gas 5) while you cook the others.
