Ingredientes

  •     Nonstick vegetable oil spray
  • 1 1/4 lb russet potatoes peeled, and
  •     sliced into 1/4" rounds
  • 1 Tbsp. extra virgin olive oil
  • 1 c. minced onion
  • 1 c. minced red bell pepper
  • 1/2 tsp dry thyme
  • 1 c. diced Canadian bacon
  • 8 lrg Large eggs
  • 1/4 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 4 ounce smoked cheddar cheese grated

Direcciones

  1. Preheat oven to 350 degrees. Spray 10-inch glass pie dish with vegetable oil spray. Steam potato rounds till just tender, about 6 min. Transfer to rack and cold. Line prepared pie dish with sufficient potato rounds to cover, overlapping slightly (reserve any remaining potatoes for another use).
  2. Heat extra virgin olive oil in heavy large saucepan over medium-high heat. Add in onion, red bell pepper and thyme and saute/fry 5 min. Add in Canadian bacon; saute/fry till heated through, about 1 minute. Spoon bacon mix over potatoes in pie dish.
  3. Whisk Large eggs, salt and pepper in large bowl to blend. Fold in cheese. Pour egg mix over bacon mix in dish. Bake quiche till set in center, about 35 min. Cold 20 min. Cut into wedges. Serve hot or possibly at room temperature.
  4. This recipe yields 4 to 6 servings.
  5. Comments: This quiche also makes a simple and delicious dinner served with a mixed green salad and some crusty bread.
