Potato Grouper In A Roasted Red Pepper Sauce

Ingredientes

  • 2 x Grouper fillets, (6 ounces each)
  • 2 med Potatoes, shredded
  • 1 med Onion, thinly sliced and minced
  • 1 ounce Lemon juice
  • 3 x Large eggs
  • 1 Tbsp. Mustard
  • 1 dsh Salt and pepper
  •     Flour for dredging
  • 3 ounce Warm oil, (for pan frying fish)
  • 1/2 c. Roasted red peppers, pureed
  • 2 Tbsp. Butter
  • 1 Tbsp. Shallots, minced
  • 1 Tbsp. Garlic, minced
  • 12 ounce Heavy cream
  • 1 dsh Salt and pepper

Direcciones

  1. Preheat oven to 400 degrees. In a large bowl, combine potatoes, onion, lemon juice, salt and pepper. Mix ingredients together. In another bowl, combine Large eggs and mustard and mix together.
  2. Dredge grouper in flour and coat in egg mix. Cover fish with potato mix. Place fish in a fry pan with warm oil. Fry till potato starts to crust (frying time approximately 1 minute per side). Remove fish from pan and place in baking dish and bake for 5 min.
  3. In a sauce pan, heat butter, shallots, garlic and roasted red peppers. Stir till hot. Pour heavy cream into sauce mix, salt & pepper to taste.
  4. Stir to a boil. Drizzle over baked fish.
