Prawn And Tomato Pasta Sauce

Ingredientes

  • 40 gm St Ivel Mono, (1.5z)
  • 2 x Cloves garlic crushed
  • 1 x Leek, sliced
  • 225 gm Mushrooms, sliced (8oz)
  • 2 x Courgettes, sliced
  • 150 ml Fish stock, (0.25 pint)
  • 1 x 400 g, (14oz) canned minced tomatoes
  •     Seasoning
  • 60 ml Dry sherry, (4tbsp)
  • 450 gm Cooked, peeled prawns (1lb)
  • 30 ml Minced fresh mint, (2tbsp)
  • 15 ml Cornflour, (optional) (1tbsp)

Direcciones

  1. Heat St Ivel Mono in a large saucepan. Add in garlic, leek, mushrooms, stirring occasionally.
  2. Add in the fish stock, tomatoes and seasoning. Mix well. Bring to boil, cover and simmer for 10 mins, stirring occasionally, till vegetables are just tender.
  3. Add in sherry, prawns and mint and mix well. Bring back to boil and simmer gently for 5 min.
  4. To thicken sauce with cornflour, blend cornflour with 30ml (2tbsp) water.
  5. Add in to sauce and bring to boil, stirring continuously, till mix thickens. Simmer gently for 2-3 min.
  6. Serve prawn sauce with boiled wholemeal pasta shapes, tagliatelle, spaghetti or possibly brown rice.
