I have returned from my Holiday & Birthday celebrations. Woo!
I have also returned slightly larger than I left thanks to all the fab food on offer too. So back onto a healthy regime I am! Lots of vegetables, healthy snacks, exercise & what some call "super foods". I have no idea what the actual definition of a Super-food is, but it sounds so fantastic, that I named my dinner after it.
Of course, there is pasta involved, but as usual, it can easily be subbed for gluten free version or even ribbons of carrot & courgette.
Ooh, and because I can, I've included some pictures from our Trip to bath =]
I have been really hungry since I got back. Not that superficial hunger that comes with having a week of indulgence but a rip roaring hunger that comes from lack of sleep, lots to do & lots of exercise. So I need lots of high energy foods to keep me going at the moment.
Plus sitting eating pizza/cakes/sweets whilst watching the Olympics can only be fun for a certain amount of time before you feel exceptionally unfit & bloated.
The box of nerds I munched through yesterday at work probably didn't do me very good, but we all have slip ups on the return to angelic eating. What's life without the occasional splurge?
For my first few days back home, I had a lot of accidents in the kitchen. I think I got too used to having my dinners cooked for me because I would leave things cooking for too long, or forget things were in the pan. I burnt my cous cous and cut my thumb on a can of tuna. So not good. By yesterday though, I was back into the rhythm of cooking. Scary how quickly you can get out of it!
For my weightwatching friends, this dinner comes in at 8PP per serving. This dinner serves two.
- 90g Pappardelle pasta
- 1 large can of plum tomatoes
- 2g fresh basil, chopped finely
- 2g fresh coriander, chopped finely
- 1 medium white onion, chopped.
- 1 teaspoon chopped chilies
- 1 tablespoon white wine vinegar
- 3 cloves of garlic, crushed & chopped finely
- 1 unwaxed lemon - halved.
- 2 teaspoons runny honey
200g king prawns, pre-cooked.
1 red pepper, sliced into thin strips.
Handful of spinach, torn.
Handful of Tenderstem broccoli, torn and chopped (or normal broccoli if you don't mind chopping a little more)
15g baby corn, sliced in half & chopped.
30g runner beans, chopped.
2 teaspoons olive oil.
First off, bring a pan of salted water to the boil. Place the Pappardelle in the pan, cover and cook according to instructions.
Chop, tear & slice the veg according to instruction and leave to one side. In another pan, add the tomatoes, garlic, basil, coriander, onion, white wine vinegar, 1 teaspoon of grated lemon zest, the juice of half a lemon, honey, pinch of salt & pepper and leave to simmer on medium heat, covered, for 5 minutes. During this time, heat a frying pan to a high temperature with the oil.
Quickly add in the vegetables, reduce the heat immediately and cook for 5 minutes. Around this time, the tomato mixture in the pan should start to bubble. Remove it from the heat and blend it until it is smooth.
Add the prawns to the frying pan along with the tomato sauce you just blended. Stir for a few minutes, reduce the heat to low and set about draining your pasta (which should be done by now, make sure you keep an eye on it)
Once the pasta is done, and you have drained it fully. Add to the frying pan and toss with the vegetables, prawns & sauce. Make sure it's well mixed before dishing up and serving.
There we are! I think Pappardelle is my favourite pasta as it's like ribbons, perfect because you only need a small amount, yet it looks like loads!
