Receta Preserve-filled pastry bites
A nice bite-sized,sweet treat that can brighten any season.

- Beat butter and cream cheese together in a large bowl until smooth. Combine flour and xanthan gum in a separate,medium-sized bowl and add to butter mixture gradually beating until a soft dough forms. Divide into 2 and flatten into discs,wrap discs in plastic. Refrigerate 1hour or until firm.
- Preheat oven to 375 F. Roll out dough one disc at a time on a floured surface to 1/8" thick. Cut into 2 1/2" squares or use same diameter round cookie cutter.
- Place 1/4 cup fruit preserves into cake decorating bag and squeeze 3/4 to 1 teaspoon of preserves onto each cookie.
- Pinch opposite sides together to seal dough.
- Place 1" apart on parchment paper covered cookie sheet.
- Bake 10 to 15 minutes or until lightly brown. Remove to wire rack to cool completely.
