%20and%20when%20I%20saw%20this%20vibrant%20fuchsia%20margarita...I%20knew%20it%20was%20meant%20to%20be.%20I%20mean...look%20at%20that%20color!%20AND%20its%20a%20margarita.%20How%20perfect%20is%20that?!%3C/p%3E%3Cp%3EThe%20Muy%20Bueno%20Cookbook%20is%20a%20complication%20of%20old-world%20northern%20Mexican%20recipes%20that%20span%203%20generations.%20The%20stories%20and%20memories%20that%20are%20shared%20are%20touching%20and%20heart%20felt.%20They%20bring%20the%20recipes%20to%20life%20as%20the%20importance%20of%20family%20and%20tradition%20are%20expressed.%20The%20team%20that%20make%20up%20Muy%20Bueno%20include%20Evangilina%20and%20her%20daughters,%20Yvette%20and%20Veronica.%20%20The%20three%20of%20them%20pay%20an%20incredible%20tribute%20to%20the%20grandmother%20in%20such%20a%20way%20that%20makes%20you%20wish%20you%20could've%20spent%20time%20in%20her%20kitchen,%20in%20her%20presence.%20Learning%20the%20old-world%20ways.%20But%20since%20that's%20not%20going%20to%20happen...lucky%20for%20us,%20Muy%20Bueno%20can%20bring%20those%20ways%20to%20your%20kitchen.%3C/p%3E%3Cp%3EThis%20week%20I%20have%20chosen%20a%20recipe%20to%20review%20based%20on%20my%20love%20of%20margaritas%20and%20my%20intrigue%20of%20making%20such%20a%20beautiful%20drink.%20In%20the%20cookbook,%20this%20drink%20was%20dedicated%20to%20the%20Grandma%20(Jesusita)%20because%20of%20her%20love%20of%20her%20tunas%20(prickly%20pears)%20and%20color%20de%20rosa%20(the%20color%20pink).%20I'd%20like%20to%20raise%20my%20glass%20and%20propose%20a%20toast.%3C/p%3E%3Cp%3EUntil%20yesterday,%20I%20had%20NO%20idea%20that%20the%20insides%20of%20these%20prickly%20pears%20are%20pink.%20Brilliant%20dark%20pink.%20My%20neighbor,%20Ruth%20grows%20them.%20Not%20because%20she%20eats%20the%20fruit%20(or%20the%20cactus%20%22paddles%22)%20but%20because%20she%20likes%20cactus%20plants%20in%20general.%3C/p%3E%3Cp%3EWhen%20I%20cut%20into%20the%20prickly%20pear...I%20was%20instantly%20reminded%20of%20beets.%3C/p%3E%3Cp%3EBut%20was%20happy%20to%20discover,%20they%20don't%20stain%20like%20beats%20(only%20a%20little).%20The%20fruit%20is%20almost%20slimy%20inside...and%20squishy.%20It%20reminds%20me%20of%20kiwi.%20Now%20the%20flavor...I%20don't%20even%20know%20how%20or%20what%20to%20compare%20that%20to.%20It's%20mild,%20slightly%20sweet...almost%20berry-ish.%20I%20drank%20a%20whole%20margarita%20just%20trying%20to%20pinpoint%20the%20flavor.%20%20I%20finally%20gave%20up%20and%20accepted%20the%20fact%20that%20it%20is%20it's%20own%20fruit%20with%20it's%20own%20highly%20enjoyable%20flavor.%20And%20proceeded%20to%20pour%20myself%20a%202nd%20glass.%3C/p%3E%3Cp%3EOnce%20you%20have%20your%20prickly%20pears%20peeled%20and%20sliced,%20put%20them%20in%20your%20blender%20along%20with%20the%201/4%20cup%20of%20water....and%20blend.%3C/p%3E%3Cp%3EStrain%20into%20a%20bowl.%20You%20don't%20really%20want%20to%20%22drink%22%20the%20little%20seeds%20that%20are%20found%20inside%3C/p%3E%3Cp%3EYou%20might%20need%20to%20get%20a%20spoon%20and%20help%20smoosh%20the%20fruit%20through%20the%20strainer.%20The%20only%20thing%20you%20want%20to%20leave%20behind%20are%20the%20seeds.%3C/p%3E%3Cp%3EPlace%20crushed%20ice%20in%20the%20blender.%20Add%20the%20prickly%20pear%20puree,%20lime%20juice,%20limeade,%20tequila,%20triple%20sec%20and%20simple%20syrup.%20Cover%20and%20pulse%20ingredients.%3C/p%3E%3Cp%3EGarnish%20the%20rim%20of%20your%20glass%20with%20salt.%20Pour%20in%20the%20margarita.%20Add%20a%20lime%20wedge%20and%20serve%3C/p%3E%3Cp%3EIf%20the%20color%20itself%20doesn't%20make%20you%20fall%20in%20love%20with%20this%20drink...then%20the%20flavor%20will.%20It's%20not%20too%20sweet.%20It's%20not%20tart.%20It%20goes%20down%20smoothly.%20I%20can't%20describe%20the%20flavor.%20If%20you've%20eaten%20prickly%20pears,%20then%20you%20know%20what%20I'm%20talking%20about.%20If%20you%20haven't....then%20you'll%20have%20to%20find%20out%20for%20yourself.%20Don't%20let%20the%20fact%20that%20you%20can%20barely%20taste%20the%20alcohol%20fool%20you.%20It's%20there.%20You'll%20know%20soon%20enough.%3C/p%3E%3Cp%3EThis%20post%20is%20part%20of%20the%20Muy%20Bueno%20Cookbook%20Spotlight%20&%20Cook-Off%20sponsored%20by%20Hippocrene%20and%20hosted%20at%20girlichef%3C/p%3E){kind=link}
