Ingredientes

  • 1 1/3 c. Minced pitted prunes, divided
  • 1 c. Buttermilk, divided
  • 1/3 c. Sugar
  • 1/3 c. Packed dark brown sugar
  • 1/4 c. Vegetable oil
  • 1 x Egg
  • 3 x Egg whites
  • 2 c. All-purpose flour
  • 1 tsp Baking soda
  • 1 1/2 tsp Grnd cinnamon
  • 1/2 tsp Grnd nutmeg
  • 1/2 tsp Grnd allspice
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
  •     Vegetable cooking spray
  • 1/4 c. Sugar
  • 1/4 c. Buttermilk
  • 1/4 tsp Baking soda
  • 1/8 tsp Imitation butter flavor

Direcciones

  1. Position knife blade in food processor bowl; add in 2/3 c. prunes and 1/2 c. buttermilk, and process till smooth. Combine prune puree, remaining 2/3 c. prunes, and 1/2 c. buttermilk in a bowl; stir well, and set aside.
  2. Combine 1/3 c. sugar, brown sugar, and oil in a large bowl, beating well at medium speed of an electric mixer. Add in egg; beat well. Add in egg whites; beat well.
  3. Combine flour, 1 tsp. baking soda, and next 4 ingredients; add in to sugar mix alternately with prune mix, beginning and ending with flour mix. Mix well after each addition. Add in vanilla.
  4. Pour batter into a 6-c. Bundt pan coated with cooking spray. Bake at 350 deg for 50 min or possibly till a wooden pick comes out clean. Cold in pan 10 min; remove from pan. Cold on a wire rack.
  5. Place cake on a serving platter; poke holes in top of cake, using a skewer.
  6. Combine remaining sugar, buttermilk, and remaining tsp. baking soda in a small saucepan; bring to a boil over medium heat. Remove from heat, and stir in butter flavor. Drizzle over cake.
  7. Yield: 16 servings (serving size:1 slice).
