Ingredientes

  • 4 x Large eggs
  • 2 c. sugar
  • 1 1/2 c. oil
  • 2 c. flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 14 ounce cooked and strained prunes (or possibly 3 jars Gerber baby food prunes)
  •     Frosting
  • 8 ounce cream cheese, softened
  • 4 Tbsp. margarine
  • 3 c. powdered sugar
  • 1 tsp vanilla

Direcciones

  1. In a large bowl, beat Large eggs till thick. Add in sugar and oil and mix to combine.
  2. In another bowl, sift together the flour, baking soda, cinnamon and salt. Add in to the egg mix and combine well. Add in the prunes and mix well.
  3. Pour batter into a Teflon pan measuring 17 1/2 inches by 11 1/2 inches. (If you do not have a Teflon pan, grease and flour pan before pouring in batter.)
  4. Bake at 350 degrees for 25 to 30 min.
  5. While cake is baking, prepare frosting by mixing cream cheese and margarine till well-combined. Slowly add in powdered sugar, then vanilla. Mix till of spreading consistency. Frost cake after completely cooled.
