Pudina rice or mint flavoured rice is a flavourful rice dish made with rice, pudina leaves and spices.  Here I have added vegetables to make it healthier.  This rice dish is very refreshing and tasty and can be had on its own or accompanied with raita, plain curd or any simple curry.  Pudina pulao also makes up for an ideal lunch box dish as it is not only easy but can be made quickly too.  Besides pudina leaves,  also coconut, coriander leaves, ginger, garlic and green chillies are added to give a nice spicy  and delicious flavour to this rice dish. If you are looking for more pudina or mint recipes, then do check : Mint lemonade recipe – how to make fresh mint lemonade recipe – summer drinks   Mint or pudina chutney recipe Pudina coconut chutney or mint chutney recipe – How to make pudina coconut chutney recipe – chutney recipes   Prep Time : 20  mins Cook Time :  20 mins Servings :  4 persons South Indan cuisine INGREDIENTS Basmati rice – 1 cup Water – 2 cups Ghee/butter – 2 tablespoons Cumin seeds/jeera – 1/2 teaspoon Tejpatta/bayleaves – 1 Star anise – 1 Black cloves – 2 Green cardamoms – 2 Black peppercorns – 1/2 teaspoon Cinnamon stick/dalchini – 1 inch Onion – 1 (sliced thinly) Tomatoes – 2 (finely chopped) Potato – 1 (cubed) Carrot – 1 (medium sized chopped medium) Turmeric powder – 1/4 teaspoon Salt to taste TO GRIND TO A FINE PASTE Pudina / mint leaves – a handful Coriander leaves – a handful Ginger – 1 inch Garlic cloves – 4 Green chillies – 2 – 3 Grated coconut – 1/4 cup Onion – 1/4 (chopped roughly) HOW TO MAKE OR PREPARE PUDINA RICE WITH VEGETABLES RECIPE Wash and soak the basmati rice for half an hour.  Then drain the water and keep the rice aside.  Grind the pudina leaves, coriander leaves,  garlic cloves, ginger, coconut, onion and green chillies with little water to a make a smooth paste. Keep the ground paste aside.  Heat ghee  or butter on medium flame, in a small pressure cooker. Once the ghee becomes hot, add cumin seeds, star anise, cloves, black peppercorns, bay leaves and cardamom and stir fry for a minute, till you get a nice aroma.  Add chopped onions and saute on a low to medium flame. Then add chopped tomatoes and cook till the tomatoes  become little soft.  Now add chopped potatoes and carrots. Mix well.   Add the ground paste and mix again.  Add the soaked rice. Add water and stir gently without breaking the grains.  Add turmeric powder.  Mix well. Close the pressure cooker with its lid and pressure cook for 2 whistles on medium flame.  Once cooled down, gently fluff the rice and transfer to a serving bowl. Serve healthy pudina rice or pudina pulao hot or warm with papad, raita or as a light lunch or dinner. NOTES/TIPS You can add little garam masala for an enhanced flavour. Add vegetables of your choice like, cauliflower, green peas, french beans to make it more nutritious. You can cook this rice dish in an open pan on a low to  medium flame, till the rice is completely cooked. Amount of water added to cook the rice will depend on the age and type of the rice.  Hence add water accordingly. Do not skip ghee as it gives a good flavor and taste to the rice.
