Welcome back to another dessert challenge hosted by Sheryl from The Lady Behind The Curtain. This month our two ingredients are Pumpkin and Cream Cheese.I do love pumpkin anything and I make a killer marble cheesecake, but I decided to make .Lightened up Pumpkin Cream Cheese Swirl Bars

Pumpkin Cream Cheese Swirl Bars

Serves: 28

Heat oven to 350°.

Spray an 11×7-inch baking pan with non-stick spray. set aside.

In a large mixing bowl, beat butter with brown sugar, 1 teaspoon vanilla, and 2 eggs until light and creamy.

Beat in pumpkin puree.

In another bowl, combine 1 cup of flour with baking powder, soda, salt, and spices.

Slowly beat into the first mixture until well blended.

Spread in prepared baking pan.

In a medium bowl, combine cream cheese, egg, confectioners’ sugar, ½ teaspoon vanilla, and 2 tablespoons flour.

Beat for 1 to 2 minutes, until smooth and creamy.

Spoon onto the pumpkin batter. Using a small narrow spatula or butter knife, swirl the cream cheese batter into the pumpkin batter.

Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

Cool completely. Cut into squares

Whenever I hear about one of these challenges, it just sparks my imagination. It’s a challenge to come up with a lighter/skinnier, or healthier version of a dessert. Desserts were created for us to bathe in sugar right? Well that’s what we all thought. But I have discovered that dessert doesn’t have to always be so freaking sweet. Most of the time it does, but not always.

And how I love the dessert challenges. The best part is sharing my recipe with every along with all the other great bloggers who enter the challenge to.
