Ingredientes

  • 2 large eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 3/4 c. flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pumpkin Roll Filling
  • 1 (8 ounce) cream cheese
  • 2 T butter
  • 1 teaspoon vanilla
  • 1 c. powdered sugar

Direcciones

  1. Heat oven to 325 degrees. Beat large eggs till fluffy. Add in sugar, beat, add in pumpkin and beat again. Add in flour, soda, and cinnamon; beat till smooth. Grease and flour a jelly roll pan. Pour mix into pan. Bake 15-20 min. Sprinkle a clean dish towel with powdered sugar. After mix is baked, turn upside down on towel and roll up immediately; set aside.Soften cream cheese and butter; beat together. Add in vanilla and sugar; beat till smooth. Unroll pumpkin roll. Spread filling. Roll it back up and wrap in foil. Put in freezer or possibly refrigerator to cool. Slice and serve.
